Month 9: Making progress

Hey all,

How’s it going? I’m so excited about spring, I love finally being able to get some sun! My office is near a park, so sometimes I take my break there, watching Southern Downtown Seattle through the trees.

As you may remember, back at the beginning of March I changed my diet again. I stopped splurging on dairy items and candy bars, and cut back on grains. Since then I’ve been feeling much better. I’ve also been getting weekly Magnesium and B12 injections, along with taking Theramine (a natural pain reliever) for my headaches.

Let me tell you, those small changes are making a difference. Between them and therapy, my anxiety has become much, much more manageable. Headaches have been stable.. I still get about one or two per week, but I feel more resilient before and after I get them.

Cooking is .. not quite getting easier, but I’m still learning. I’m happy about the “staple” items I’ve been eating lately. A lot of meat and vegetables, limited fruit and grains. I love the taste of food that makes me feel good.

Goat cheese! This one has a nice, mild flavor that reminds me of gouda. The flavor subtly melts into the classic “blue” taste of goat cheese. After not having dairy for weeks, this was a welcome treat.

Musings

I have a secret hope: Deep down, I truly believe that depression, anxiety, migraines are all physiological. If I can get enough sleep, if I take the right vitamins, if I drink enough water.. maybe, just maybe, they’ll all go away.

It may not be true, but it keeps me moving forward.

Apple Tarts! On Friday, Lindsey and Kahley came over for a movie night, and we ended up making apple tarts. Here’s what we did:
For the crust, we made 1/2 batch gluten free pie crust from here: http://glutenfreegirl.com/gluten-free-pie-crust/
For the filling, we cut up an apple that was a bit soft from having being frozen and thawed again. We threw it in a frying pan with a little oil, brown sugar, and cinnamon, then cooked until it seemed cooked enough, haha. We were trying to caramelize, but nothing happened.
We then separated the dough into 2 sections, rolled it out into circles, put it on the pan, put in the filling, and folded the dough over into a triangle-like shape, cut some slatted air holes, then baked it at 350 for 25ish minutes.
Voila!

Feeling better

Hey readers, how’s it going? I’ve added a couple features to the site that may make it easier to interact with the blog, including a Subscribe feature (links to an RSS feed), and a Post Something feature, where you can add your own allergy friendly recipes, links, and photos. I’ve also turned on the Comments feature, so you can comment on posts.


Anyways, I figured I’d let you know how I’m doing since I’ve found out about my vitamin deficiencies.

First of all, I let’s talk about B12 and Magnesium, which I had injected into my arm a couple weeks ago. When I first got the shots, I didn’t feel much different. However, after a couple days I started noticing that the weakness in my left hand was a little better (it’d been feeling funny for a while.. I’m still not sure if it’s related to magnesium deficiency), and that my anxiety was much more manageable.

When I first learned about my magnesium deficiency, I purchased some epsom salts (made from magnesium sulfate) to dissolve into a bath to be absorbed into my skin. I took an epsom bath every day for a week, so I could get some magnesium. The first few times I took baths, I was still getting some severe panic symptoms. When I got in the bath, I felt like I couldn’t breathe. I was afraid my throat would close up and I’d suffocate. Or that I’d slip under water and drown. But now, after getting my B12 and magnesium injections (and taking liquid form every day along with powdered supplements), my panic is much more manageable. I’m able to take baths and almost feel relaxed, and this weekend I spent nearly 16 hours among crowds of people, and only felt panicky a couple times. I don’t know what’s making me feel better, but I’m glad it’s working.

Today I have another injection of B12 and Magnesium. I’m glad, because I feel like my anxiety is creeping up a little, and my left hand has gone back to feeling weak (the injection is supposed to be weekly, but it’s been 2 weeks since my last dose).

I also start my first yoga class today! Exercise is supposed to help with stress, and meditation should help me work through anxiety better.

Banana bread! This was super easy to make.. I just followed the Betty Crocker recipe, using Manini’s all-purpose GF flour, lard instead of butter (it actually contains less saturated fat, and it’s dairy free!), and ground flax-seed/water instead of an egg. It was a little dense since I couldn’t use eggs, but it was delicious and very filling. Would make fantastic muffins.

Peanut Butter Cookies! I’m testing out Manini’s all-purpose gluten free flour. So far, it’s great! I’ve already had four of them.
Edit: Make that a baker’s dozen.. I made two batches, and had more than half of them! To my credit, they were small.. and I never get cookies! I had to fill up my cookie resevoir.

Repletion

On Saturday I have a very exciting appointment at the doctor’s. I’m getting injections of both B12 and Magnesium! The magnesium supposedly stings for about 20 minutes afterward, but that’s something I can put up with. I’m looking forward to feeling better. Wish me luck! :D
